Sharpening steel
You use a sharpening steel for the daily minor maintenance of your knives. You don’t use sharpening steels to sharpen, but to repair your bent edge. In this way you give a slightly dull knife some sharpness, without taking away material. For long-term maintenance, however, you should use abrasive materials.
